Saint Peter is one of the most acclaimed restaurants in Australia. Due to his innovation in sustainable seafood cooking and preservation, the chef, Josh Niland, is a James Beard winner and multiple chef of the year winner across Australia’s most prestigious food mastheads. The restaurant, in its various iterations, holds two hats with the Good Food Guide and has been either nominated or named restaurant of the year in Time Out, Gourmet Traveller and The Good Food Guide.

Its current iteration is the most luxurious and ambitious. Sitting in Paddington’s aptly named, heritage-listed Grand National Hotel, the restaurant features a menu of lesser-known seafood cuts and a scale-to-tail approach that sees more than just fillets heroed on the menu through seafood charcuterie, snacks and even desserts. In and around the creative take on seafood, you’ll taste the best of Australian produce, including several Australian natives.
