Once named the best female chef in the world, Smyth pays homage to her childhood in Northern Ireland while incorporating uniquely Sydney flavours. Afternoon  

Make your way to Empire Lounge in Rose Bay for a glass of bubbles. This waterfront bar also serves as the departure lounge for Sydney Seaplanes, where your captain will be waiting to whisk you away for today’s adventure. Enjoy an aerial tour of Sydney, soaring over the harbour and tracking along the glorious Northern Beaches before landing on sparkling Pittwater. Then settle in for a long lunch at Bert’s Bar & Brasserie at The Newport. Start with fresh seafood from the oyster bar, then a grass-fed steak cooked over charcoal and ironbark, and finish with something from the cheese trolley.

DAY THREE: WONDERS ON THE WATER

Morning 

Start with a leisurely breakfast in the Dining Room. The croissants and pastries are legendary, omelettes come stuffed with spanner crab and fresh herbs, and the chefs produce their own honey from hives on the hotel roof. 

Then grab your swimsuit and sun hat and stroll down to the wharf to meet your superyacht, Ghost 2. One of the largest and most luxurious boats on the harbour, this 122ft floating resort has multiple places to soak up the sun, a jacuzzi and a swimming platform at the stern. The team from Sydney Harbour Exclusive will stock Ghost 2 with an indulgent lunch, including fresh seafood platters and plenty of champagne.
