Set high above the city on the 26th floor, Oncore by Clare Smyth is the first and only international restaurant from the three-Michelin-starred chef. Once named the best female chef in the world, Smyth pays homage to her childhood in Northern Ireland while incorporating uniquely Sydney flavours. Make sure you order her signature ‘potato and roe’, a seaweed beurre blanc with herring and trout roe. Finish the evening with a nightcap at CIRQ, Crown’s rooftop cocktail bar.

Morning 

Ask your butler to arrange a private yoga class on your balcony this morning, so you can salute the sun with a breathtaking view. Afterwards, head to The Spa for an invigorating Rainforest Revival treatment. With a lemon myrtle body scrub, full body massage and cucumber mask, it’s the ideal way to start your day.

Afternoon  

Make your way to Empire Lounge in Rose Bay for a glass of bubbles. This waterfront bar also serves as the departure lounge for Sydney Seaplanes, where your captain will be waiting to whisk you away for today’s adventure. Enjoy an aerial tour of Sydney, soaring over the harbour and tracking along the glorious Northern Beaches before landing on sparkling Pittwater. Then settle in for a long lunch at Bert’s Bar & Brasserie at The Newport. Start with fresh seafood from the oyster bar, then a grass-fed steak cooked over charcoal and ironbark, and finish with something from the cheese trolley.

Evening 

Return to the Park Hyatt for a quick swim (or even a nap) and enjoy a light dinner on your balcony as the sun goes down. Celebrated chef James Viles designs all the menus for the hotel and his expert team will create and exceptional meal that combines local ingredients with native flavours, served with style by your private butler.

Put your party clothes on and duck out for a late-night drink at Dean & Nancy on 22, a chic New York-style rooftop cocktail bar in the CBD. Look out over the twinkling skyscrapers as you sip on one of their playful Above the Clouds cocktails, like the Alien on Holiday or Rocketman.

Morning 

Start with a leisurely breakfast in the Dining Room. The croissants and pastries are legendary, omelettes come stuffed with spanner crab and fresh herbs, and the chefs produce their own honey from hives on the hotel roof. 

Then grab your swimsuit and sun hat and stroll down to the wharf to meet your superyacht, Ghost 2. One of the largest and most luxurious boats on the harbour, this 122ft floating resort has multiple places to soak up the sun, a jacuzzi and a swimming platform at the stern. The team from Sydney Harbour Exclusive will stock Ghost 2 with an indulgent lunch, including fresh seafood platters and plenty of champagne.

Some of Sydney’s finest stores are tucked away in the backstreets of Paddington, Woollahra and Double Bay – but they can be hard to find. You might want to wear one of your new purchases to dinner tonight. Icebergs Dining Room and Bar is a Sydney landmark, sitting high above the famed ocean pool at the southern end of Bondi Beach for more than 20 years. The menu is fine dining modern Italian with a few innovative Japanese twists – don’t miss the showstopping seafood crudo platter. Request a table by the window for an Instagram-worthy view and keep an eye out for celebrities.
